Barbara's Simmer Sauce Recipe
I love gardening and preserving my goodies!
Preheat oven to 250 degrees
Wash and core tomatoes(50 pounds)with fresh basil, parsley, 1/4 cup red pepper flakes(we like spicy), 2cups olive oil, 1/4 cup of salt and 1/2 cup of white sugar. I had a bunch of fire roasted tomatoes I added to thr batch and it turned out great!
Roast for 8 hours stirring occasionally.
Let cool, remove herbs and process them through a food mill using largest grate so your sauce has texture. I use a PH tester and set my ph goal to 4.0
If your above 4 then add a little citric acid until ph reads at 4.0
Bring to a temperature of 180 degrees for 5 minutes, kill step, then hot fill jars and invert for 2 minutes!
I don't do water baths anymore for canning, I use ph tester and inversion techniques.

Easy Key Lime Cheesecake Recipe!
Mix 1 block of low-fat cream cheese, room temperature, with 1 container of no bake cheesecake mix,(found it beside cream cheese)1/2 cup fresh key lime juice, zest of 1 lime, 1 top of vanilla extract, all in a bowl using hand mixer until fluffy, then fold in sugar free coolwhip, put in pre-made graham craker crust and chill.
Tangy but not too sweet!
